Spiced Buckwheat Pancakes with Cinnamon Butter

ESSE baked spiced buckwheat pancakes with cinnamon butter

Delicious gluten free pancakes flavoured with ginger and served with melting cinnamon butter are a dream to cook direct on the ESSE hotplate.  A real treat for the festive season!

Using buckwheat flour gives them a delicious nutty flavour, they are more nutritious and naturally gluten free. As there is no gluten, you don’t have to rest the mixture before baking them and I find them easier and quicker to cook.

Ingredients:

  • 100g buckwheat flour
  • 1 ½ teaspoon baking powder
  • 1 large egg
  • 150ml milk
  • 2 heaped teaspoons ground ginger
  • 3 bulbs stem ginger, finely chopped, plus a tablespoon of ginger syrup from the jar

For the cinnamon butter:

  • 75g butter, softened
  • 50g light muscovado sugar
  • 3 teaspoons cinnamon powder

Method

For the cinnamon butter, simply beat the butter, sugar and cinnamon together until soft and spreadable.

To make the pancakes:  Place the buckwheat flour and baking powder into a large bowl and make a well in the centre. Whisk the egg and milk together in a jug, then pour into the bowl and whisk for a few minutes until you make a smooth thick batter.  Then stir in the stem ginger/syrup and ground ginger.  Pour into a jug.  Heat the hotplate (the dial at 12 o’clock) and when hot pour a little of the batter to make small pancakes and cook for a minute or two until they puff up and are set.  Then turn them over and cook the second side.  Serve the pancakes spread with a little of the cinnamon butter or stack the warm pancakes and spoon the butter over the top and let it melt over them!
