Tim pops up and serves a real treat in the ESSE kitchen

TV chef and food writer Tim Maddams dished up a culinary treat for visitors to the ESSE pop up cookery school in Preston’s Fishergate Shopping Centre.

Tim, who regularly co-featured in the hit TV series River Cottage, brought his very special take on cooking to Lancashire from his Devon home.

As well as giving some great tips during his demonstrations he talked food with the audience, some of whom had travelled from North Yorkshire and Greater Manchester to see him in action.
Tim is among the team of top chefs the Barnoldswick stove maker ESSE recruited for its Preston event.

He created all his dishes on its new ESSE EL 13AMP – the most advanced 13amp heat storage cooker on the market.

Wild food and quality produce forms the cornerstone of his culinary ethos and he served up a range of food ideas during his session. He said: “I feel strongly about the importance of knowing where your food comes from – the ethics behind its production and knowing the sustainability of the ingredients.”

Over the course of his career Tim has worked under such culinary luminaries as Fergus Henderson, Alistair Little, Marco Pierre White and Mark Hix, as well as leading the VIP catering team for the Ferrari F1 team in Europe.

During his time as head chef at River Cottage Tim pioneered ethical, local, seasonal produce and became a key spokesperson in the arena of responsibly-sourced food. He set up his own company, Green Sauce, in 2012, teaching, cooking and consulting on ethical food.

James’ Places, a host of acclaimed Lancashire restaurants and hotels, including Mitton Hall in Whalley, the Shireburn Arms in Hurst Green and The Emporium in Clitheroe, also supported the pop up, which will now run until August 9, with cookery demonstrations from members of its team.

The company’s own in-house chef Steven Evans, who trained at Nigel Haworth’s Michelin-starred Northcote Manor, will also be giving cookery demos during the event.

Visitors have the chance to see its new ESSE EL 13AMP being used by the chefs to create their trademark dishes.

“He was a great hit with visitors and the afternoon was a tremendously enjoyable event serving up some some great food and conversation.”

The new EL 13Amp has ESSE’s classic cast iron construction, heavy duty ovens, beautiful enamelling and the reassuring ‘solidity’ of its classic range cookers – all with modern, electric controllability and responsiveness.

The heat storage electric range cooker is available from dealers nationwide in a choice of 22 enamelled colours.

It has the quickest oven heating up times – from slumber to 200°C in less than 25 minutes – and independently controlled temperature settings.

The ESSE pop up is offering the opportunity of cooking demonstrations for companies and organisations.
